Would using a 2u case bring down the VRM temps of H11Dsi?

if you now use a chassis with a air shroud and similar fans to the ones in the 825 then no.
If you use a big tower with "consumer" 120m fans running less than 1k rpm then very likely yes.

I made a case where the majority of the the airflow went across the back side of the motherboard. It worked fairly well at cooling VRM as the motherboard standoffs were about twice the height of normal; I ended up needing a supplemental fan for the CPU2 VRM even with all this though.

Thank you for your insight but may I ask what the differences between the 825 and 826 are?
The 826 has a 12-bay backplane instead of 8-bay. It's generally easier to find newer backplanes for it for future upgrades. For example, you could get a backplane that supports NVMe drives, and connect them to the OCuLink ports on the H11DSi.
