I 'm putting in a VM for security cams. Since it'll be getting one of my pools, is it advisable or possible to separate that from my other pools? ie, create another storage vswitch, and only use that network for the NFS shares for my cameras? Concerned mostly from a security perspective (chinese ip-cams)

I host internal pc based NVR and block ALL internet access to all my IP cams by IP block. Similar could be done using vlan as separation.
I won't be too much concerned with security otherwise unless the video feeds themselves are extremely sensitive even on the internal network.

Well, I think I'm sharing the ZFS pool as NFS to my VM. I suppose since the cams subnet has no internet access, the fact that the cam software has access to the storage network should be safe enough.
