I would go with 8x 16GBSo I ended up ordering Intel R2312GL4GS Server System 2U Rack, Socket R, New Bulk Packaging. They took a $325 offer. Now I need the rest of the parts. Is the SR0KX stepping the one to get? Can someone point me to RAM options? Is 16 x 8GB sticks that way to go? Is 8 x 16GB that much more expensive? ESXi pass through won't work on the onboard SATA for the VMs right? So I'll still need a couple of HBAs? Anything else I'm missing other than storage to complete this build?

Ya, those are exactly the 2 things that I suspected. Older package date and V2 is not primarily indicated in the 2nd listing. Maybe they're taking less for the 2nd listing because they were packed in 2012 vs 2014? It's still the exact same parts though.
Edit: Maybe the cheaper listing doesn't come with the BIOS update to support v2 chips out of the box?

Thanks your'e absolutly right! found the original cables in a "parts list"I'm no expert and it's really late and my brain is asleep, but if you have a look at SFF8087 cables they have one connector at one end and four leads at the other end to connect to hard drives. You need to make sure you using the right cable SFF8087 or SFF8088 etc and that they are 'forward breakout' (connector to hard drive) or 'reverse breakout' (connector to backplane).

umm , how do you plan on getting power connector's for harddrives and such, since the PSU doesn't have any, Intel FXX750PCRPS DPS-750XB A 750W Common Redundant Power Supply New System Pull . BTW he instant declines 15$ and instant accept 20$ for the psu.That looks pretty much like my shopping list too. Should be enough to at least get to play with the BIOS settings. Hopefully someone else can chime in if there's something obvious missing.

It should take a simple 6 pin to sata power cable.
