I haven't seen much on Monero Builds, so I figured before I pull the trigger, I'd ask if there is anything people would change.

Fractal Design Node 304 Black Aluminum/Steel Mini-ITX Small Form Factor Computer Case

ZOTAC GeForce GTX 1070 Mini, ZT-P10700G-10M, 8GB GDDR5

CORSAIR VS Series VS500 (CP-9020118-NA) 500W ATX12V / EPS12V 80 PLUS Certified Active PFC Power Supply

GeIL SUPER LUCE AMD 32GB (2 x 16GB) 288-Pin DDR4 SDRAM DDR4 2400 (PC4 19200) Desktop Memory Model GALR432GB2400C16DC

ASRock H110M-ITX LGA 1151 Intel H110 HDMI SATA 6Gb/s USB 3.0 Mini ITX Intel Motherboard

Intel Pentium G4600 Kaby Lake Dual-Core 3.6 GHz LGA 1151 51W BX80677G4600 Desktop Processor Intel HD Graphics 630

I own the case, so that's not included in the total. Total is around 750$ and I'll need an OS Drive.

One area I'm not sure is how much CPU is need, as this is going to be GPU based Mining.

Any help is appreciated.

Is is a dedicated mining machine? If yes, which OS, you could reduce ram down to 2-4gb
How many GPU ? ITX mothboard would limited # of GPU in the rig. More GPU the better.
ITX Case is a bit small.
Your CPU is fine for GPU mining.

I used a old $10 desktop ( 5-10 years old ) ATX case, if you doing GPU mining,
you will need lots of 120mm or 140mm to move air.
I also leave the top open , hot air raise. I use cardboard to direct air flow to the hot zone.

I was going to use Ubuntu and Patrick's docker image. One GPU is fine for me now, though I might see if I can get another case, and an ATX Motherboard for future expansion.
