Wondering, what if any real differences there are between the two mini PC's?

Looks like the P330 is more readily available in my region.

About (AU)$600 for a P330 with an i7 16gb & GPU. Also wondering people think of this vs like an N305 with 16GB system?

I don´t know, as the both models (p330 & m920) have two M2/NVME. My old one is the M710q and it have only one M2, for the second M2 is no soket, but pins to solder them. My new one is the M90q gen.4, this have in summary three sockets (to on the bottom, on on the top of the MB).

M920x does have 2x M.2's in contrary to M920q which has one.

For OP, they both have the same chipset, so the only difference I can think of is the vent on top of the chassis for a GPU. Also, the heatsink for the CPU might be different (aluminium vs copper?)

E: nvm, some M920x models seem to have the vent.
