Hi all - I have 128GB DDR4, ECC (8x16GB modules). I also have an EVGA X99 Classified. Thinking of combining the two and building another ESXi host. But, being that 2011-3 is newer, are there any affordable CPUs available for this? Just got done building my dual E5-2670 build, but always looking for the next project.

Take a look at 1603 and 1607 V3 chips, quad core no HT, i picked up the one in my desktop for around 100-120$

@OP - define affordable ..... E5-2603 v3 new ~$200+ at the low end.
As Pyro mentioned the 1600 series if you want higher clock speeds ..starting ~$300+ new

@Pyro - is that an ebay / used price?

Awesome guys - are there any 6 core w/ HT CPUs for similar? Or, 8 core with or without HT?

You would need to look for used 2603 or 2609 chips but these will be low clock speed chips
