Question, can one just use a simple setup as a home server, as in, a workstation MB running an Intel i5 2500K with16GB RAM, dual Realtek gigabit LAN.
Just to tie a few computers, storage, small business firewall, Cable Modem all together.

Yes. In fact, most of us here started that way. My first WHS machine was an almost embarrassing frankenserver build from old parts I had lying around (including at least a couple named "abby-something").

I had to ask, I felt I could use whatever I had laying about. I have an older PDSLA MB and a new system, workstation, I just put together using a C7P67 SM MB, thinking of using maybe the PDSLA for the server, tho it's really a workstation MB, it has the gigabit LAN ports.

That is really fine. If you wanted to use Linux that would make your life a lot easier also. There are probably countless home servers made from old parts and Linux at this point.

another use if I can would use it also as a Media server too, does Linux support this too or would windows version be better.
I should have stated it would be used as data storage, LAN interface, CAD Data storage, Media storage, ,etc
