Ok so here's what I did:
Created a ZFS mirror and made a NFS share on it.
Installed nfs service on Ubuntu
mount -t nfs to mount the share. That didn't work due to permissions. I changed permissions so anyone can edit in FreeNAS not just owner group. That worked.

Here's the thing. It WORKS but now anything on the network can get to my nfs share!?!?

Isn't there a way to make a password share and do nfs? I tried this for hours and it's not working.

NFS doesn't really do passwords. It's based on userID and is intended for environments with a directory server or similar. You can restrict it with IP address, but that's about it. If you need better security, you could restrict it to a VPN network and access it that way. SSHFS is a decent option. And SMB of course.

Under sharing/unix(nfs)/

click on the share name then [Edit] [Advanced Mode]

In there you can play with Maproot User/Group etc. You can restrict the access somewhat that way.

FreeNAS disable NFSv4 by default. The major benefit of NFSv4 is better access control.
