Looking for something that meets this:
->8 ports(via 2 mini-sas)
->Well supported(FreeBSD/Windows are a must, Solaris and pals are a bonus)
->Newbie friendly, I'm not the most technically savvy guy around so I'd prefer not having to do too much to get her running
->Good support! Knowing my luck things will go wrong, I don't wanna be down and out for too long, and I have no idea how any of these companies are :/

I've been looking at the Intel SASUC8i, is this a good choice?

P.S. RAID will definitely, 100% not be needed

The Intel card is a great choice, as it's a rebadged LSI 3081E-R, which works well under FreeBSD (and I assume Windows also). There's also the Supermicro AOC-USAS-L8i which uses the same LSI chipset (1068e) but needs a bit of modding to fit in a conventional ATX computer case. I believe the IBM ServeRaid BR10i is also pretty much the same card.
