I think many of them don't have 5V output, so if you can share what you really need from the PSU, just 12V or you want high current 5V as well. Or is it possible to split the load? Get a low cost regular PSU, then put all the heavy loads to the bigger server PSU.

I think there are some Supermicro non-redundant PSU that comes with cables attached. Might be easy to just use those, just short the power pin to get it running.
