I am in the processes of upgrading to 10Gbps networking gear. I was curious if I still used my 1Gbps router for dhcp and internet connection, but then connect it to a 10G Switch, will the devices that are connected to this network via the 10G switch get 10G speeds between each other, still being routed by the router. My internet speed is only 300mbps up and down so that end of it I don't have any concerns over and 1G interweb would be the biggest upgrade on that end in any near future.

The switch will route traffic between computers in the same subnet. Your 1gig router will only be used for DHCP for local traffic. Even if you have a more advanced setup with VLANs you can configure L3 managed switches to do L3 routing between subnets.

Yes. You'll get 10gig between your devices.
