I am reshaping a rural home with relatively low bandwidth (the internet provider can only supply 100Mbit/s). Does it make sense to route the WAN through a virtual pfSense box (Hyper-V) on a Win11 NUC13Anki host? Or is the performance going to be horrible?

I should mention that the NUC13Anki, though surprisingly powerful for its small footprint and price, has only 1 ethernet port. Hence either the LAN or the WAN port would have to go through a USB-C/ETH adapter.

what does a pfsense instance do for you that isp supplied equipment or existing wifi appliance does not?
that hardware is overkill for a virtualized pfsense 100mbit
you can with vlans, use only the one nic
usb will add latency and overhead

Primarily a VPN server, which is a necessity for me.

This is very interesting, thanks. Can you elaborate a bit, and perhaps draw a topology example? I've never set up VLANs but I am always eager to learn something new.
