I am willing to sell this dual socket Server but if I have no idea how much it's worth?
And should I sell the RAM separately?

Well the chassis might go for 100-150, the board for 200-250, memory maybe 80-100 ea (according to ebay prices, but of course there are deals to be had that get each component cheaper).
You probably get more if you split up.

I bought on eBay.de an CSE813M with an X9 + 1220 v2 and LSI 9211–i8 for 120EUR with delivery to Malta. These cases are starting to come in below 100EUR. Seen similar boards below 200EUR. They are not very common and that takes pressure on the price. I think case and board around 300EUR is fair.

Edit: To be fair I missed the 600w power supply.
