This switch has been on my watch list. Just didn't have a stomach / need for spending that much for home lab and was monitoring auctions to see if I could get lucky. Now that it made the STH main site post, that hope is pretty much squashed :)

I suppose silent or at least "quiet" 40GB is too much to ask for right. I assume these are loud?

These are definitely loud. I can hear it a floor above my unfinished basement if the fans are running above 60%. I use only 4 ports and know I will never tax the switch so I run it with the fans spun down to ~40% and it's bearable. Still noticeable though.
 
Yeah, fans on the Arista are not quiet, mine is in the garage and you can hear it through the garage door when you walk by outside. The other 40gbe switches that I have, have quieter fans: Dell S6000-on, HPE Altoline 6940. These are basically the same as the Edgecore 6712-32x, but for some reason only the Dell is listed as a platform for Sonic and OpenSwitch. The HPE 6940 was the OpenSwitch reference before Dell took over.
