Below are the main specs of each range, and the best currently available.
There WILL be models with lesser specs within each range.
Please do your home work on each model within each range to make sure you are not dissapointed with your purchase.
There are models in each range with less cores, no HT, less cache etc etc
Far too many models to quickly show each one.
Intel have made a giant lineup to choose from.

Most importantly to start with look at the motherboard each requires and how many CPU's each can work with.
This will be your first step in a system build.

A couple of exceptions to hyperthreading;

E3-1220
E3-1225

E5-2603
E5-2609

are all 4C/4T. May catch someone out who's looking to save cash and doesn't pick up that they won't get 8 threads.

Yes it would pay to look closely at the sub models of each range.
I've taken the top end of each CPU, so basically the best you'll find in that range.
The above is to give a quick glance at what kind of motherboard you are going to need.

There are plenty of sites that have all the models exact specs, do your homework first before buying.

Added new E5-1400 range.

quite an odd range, specs are from Intel website but might be wrong.
Normally 1xxx CPUs are single CPU configs
Specs looks very similar to 2400 series.

CPUs can be configured with Dell Power Edge T320 and IBM X3530 M4 systems.
Could be just an OEM CPU range.

Pretty sure now that the E5-1400 is a single CPU config
Intel has made a mistake (again), fire the Copy and paste dept.

The E5-1400 can by the looks of it be in a Dual CPU motherboard but only one will work.

8GT/s, PCIe3, quad CPU capable - the E5-4640 looked exciting... until I saw the price. Four of these CPUs, the logical step up from my quad Opteron 6172, cost ELEVEN THOUSAND DOLLARS! By way of contrast, my four AMD 6172s cost me $1,400 total on eBay. Now it's true that the Intel CPUs are faster - perhaps as much as twice as fast - but they'd need to be eight times as fast to make economic sense for me. I guess I'll be sticking with AMD (and sadly PCIe2) for a bit longer.

Nice collection of specs in one place.

Probably worth noting which models have on-chip video and which don't.

For example the E3-12X0 don't have on-chip video with the exception of the E3-1260L whilst the E3-12X5 processors do. Handy for people choosing motherboards as a lot with C202/204 chipsets also have onboard video (i.e. the Supermicro X9 series/ Intel S1200BTx series) and whilst the boards using the C206 chipset don't (i.e. the Intel S1200KP).
