This is my first time hearing of a socket "adapter". I've never seen one used - it sounds like a world of pain and potential bugs. It would be much easier to RE an existing E7 motherboard and adapt it for 1-2 socket. The chipsets are likely clonable as well.

This is how motherboard design is done in general. Make one board and re-use as much design as possible for other variants / SKUs.
Used a pair 18 years ago to pack some p4's into a dual celeron motherboard. Also required some rewiring of the pins on the back of the board as well. But it worked

Another example would be slot 1 to socket 370 adapter. And more recently socket 771 to 775.
Interesting. The LGA 771 to 775 socket adpater / sticker is only $1 on ebay!

Aside from BIOS support that would be the easiest thing to do if possible but it seems these pin outs are vastly more different: https://www.servethehome.com/haswell-ep-ivy-bridge-ex-ivy-bridge-ep-sandy-bridge-ep/ and the much higher bus speeds will make it easier to cause impedance mismatch.
