1. Simple vSphere cluster (what features do you wanna test/have licensing for, this can limit what you can do fairly quickly)
2. vSAN
3. vCloud Director/vCAC
Could go on and on, as suggested we need a bit more background on requirements, expectations, and deliverables.
If all you want is a simple vSphere cluster (can start w/ a 2-node although I highly suggest three as a starting point) that can be achieved in a rather short time. Hangups for you depending on experience may be deploying a vCenter appliance, getting 10G nic .vib loaded, and coming up to speed w/ the web client. Other than that EVERYTHING is pretty much out in the open realm of shared knowledge either from prominent bloggers or official free VMware documentation. They don't do a bunch of monkey business like trying to hide/limit you to KB/documentation sets like a lot of other vendors do w/out a support contract/paying serious loot for the product.
