I'm trying to use a workstation PSUs (ZEUS 1650R Titanium) with a server motherboard Asrock Rack TURIN2D16-2T.

There are 2 types of cables I have that look similar: The EPS ones that appear to be for the CPU and the PCIe ones that look like the CPUs ones.

My problem is with the connectors on the motherboard, I don't know which one is supposed to take the CPU cables (EPS) and which one should rather get the PCIe cables.

Does it matter if these cables get used interchangeably?

The motherboard manual doesn't distinguish between the two and either adds confusion or clarification. It states “This motherboard provides three ATX power connectors”, it's obvious there are 5, but not sure what they mean by three, are these the none-CPU ones? and if it is the case which ones are these?

The connectors are ALL EPS connectors.

EPS cables don't fit into PCIe connector and PCIe cables don't fit into EPS connectors.

“This motherboard provides three ATX power connectors”, it's obvious there are 5, but not sure what they mean by three, are these the none-CPU ones?
Probably copy & paste error from another board.

2 of the PSUs I have (Silverstone and Corsair) seem to welcome both EPS and PCIe on the same connectors. This is what made me even more confused
Yes, on the PSU side they are the same, because both EPS and PCIe are basically just 12V + Ground, so the PSU manufacturers tried to simplify things. But the connector side that plugs into the board is different.

"Trilogy in five volumes" strikes again… :p

Does it mean that Server motherboard always use only EPS?
Server boards, just like other boards, use whatever the manufacturer put in. AsRock Rack has a few motherboards which use a micro 4-pin connector in place of the usual 24-pin ATX power in order to save real estate.
Thankfully, your PSU is modular. See with Silverstone customer service to buy more EPS cables.

All connectors on the motherboards as well as on the PSU have this shape pattern (that's how they look to me in the picture Red=house, green=Square):

Square - House - House - Square
House - Square - Square - House

That's the standard shape for 8 pin Mini Fit Jr connectors, doesn't indicate anything about the pinout or function, on an ATX motherboard they're standardized but on the PSU side each manufacturer chooses which pins to use for 12V and Ground, if you found that connector on any other piece of equipment the cables would fit but who knows what voltages or signals might be present or expected on each pin.
