So, NVIDIA only supply Desktop Acceleration with RDP on windows with Quadro and Tesla drivers.
Obviously most home users don't need Quadro's on there KVM and are like myself who want a 1080ti.
Plus there is a handful of software programs I run that need OpenGL on the desktop to even open.
So how I figured this out:
Passing through the GPU with keyboard and mouse with a monitor I had no issues, perfect desktop acceleration on the monitor and then when connecting through RDP I still had the acceleration.
Although when I disconnected the Monitor/Keyboard/Mouse and put the server in the other room the desktop was poor. Not scientific but the best test is with youtube.com and I couldn't playback a video.
So I plugged a monitor in and then came back the acceleration. BOOM
So I use one of these on my Mac Mini
For the reason of getting desktop acceleration from the GPU and so I plugged it into the 1080ti on the server running the KVM and I have full desktop acceleration over RDP.
