Reading the specs it looks like this supports xeons, celerons, pentiums and i3. Why wouldn't it support an i5? Is that correct? I have an old i5 lying around, so it would be great to use that.

Because it's a board for ECC memory only and i5 does not support ECC, it's supported on i3 as a low end CPU for storage appliances etc.

Some may say odd market segregation by intel but just the way it is.

It may depend on the board and it's firmware and also on the specific i5 procesor. In a different forum regarding the HP ProLiant Microserver G8, there are stories of i5-3470T and i5-2390T working well in the server with ECC memories. It is supposed that only the T variants of i5 processors work with ECC, and not even all of them.
