Suggestions for expandable backup box with vms for rendering

Forgive the newb. Need OS suggestions here..

Looking to build a backup server that can can also use windows via vm's for rendering nodes. Currently have 40 tb backed up online including a lot of duplication both in the main workstation and online..however not ideal.

0 knowledge of linux, total newb as regards server os etc..and it has to be cheapish. Thus easily expandable so kind of rules out freenas or zfs systems despite desireability of zfs file system/resiliency.

After some research looking really at unraid with max parity discs (2 or 3 now?)..freebsd seems out until raid 6 fixed..rockstor possibly or flexraid.
? Lots of reddit threads of course with fanbois.....

Ideally painlessly supports windows vm's, although I can hack some learning curve pain in exchange for resiliency.

Could use storage spaces parity also but so little info out there and not buying win server software..(licensing per core now? with 18 core xeon? fuggedaboutit).

Will still be backed up online.

Suggestions? Is there an OS I've missed?

case antec 1200 have
cpu xeon e5-2696 v3 have
memory 32gb kingston ecc ddr4 rdimm stolen from workstation have it
mobo some x99 thing dont have
psu dont have 850 -1000 watts (or steal ax860i from resurrected workstation)
enclosures 4x norco ss-500 have 2
m1015 dont have, or m1115
ibm sas expander dont have
2x 10g sfp+ nic and receivers dont have, ditto fiber cable as more than 10m
lots of hdd dont have

phew not gonna be cheap!

Suggestions welcome..

Addendum..guess could use linux vm's of maya max vray backburner etc..but never tried linux..haven't gone over to the dark side yet (or do I have that backwards?)....
