Suggestion/input for server re-configuration/upgrade

Hi everybody,

I have been lurking around on Serve The Home for quite some years and thought it was time to join the fun and pick some brains :).

I am not sure where to put this as it covers a few of the sub forums.

I am currently in the progress of re-configuring my home server with the current hardware I have laying around and also making and upgrade plan; I thought it would be good to have some input from this create forum.

The server will be used as an all-in-one box.
Currently I am using Ubuntu 14.01 server on the physical box with LXC and KVM.
Access to the disk is done directly on mount points on the physical server.

Among the virtual servers I will have:
Web servers (apache, php)
MySQL
minecraft server
pfsense
file server for both windows and linux clients
media server (mediebrowser, plex or something similiar)
onsite backup server (replicated to an offsite server)
mail server
zabbix

Everything will be with low usage and most of it duplicated (production and test environment).

The file server will be used for:
movies
tv-shows
music
pictures
documents

How would you configure the disks?
What OS/software should I choose for the hypervisor and fileserver?; I would like to avoid hyper-v and ESXi.
What hardware configuration will you suggest for low power usage and low noise (hardware list below)?

Feel free to come with any inputs/suggestions and ask any questions

note: only 2 servers (all-in-one + offsite backup) will be running do to noise and power usage.
