My brother is using a mellanox connect-x2 in his pc, it has out of the box driver support in windows and it's not picky about dac cables or optical transceivers :D

Connect-X2 is fine if you have the required 8 PCIe 2.0 lanes available on the motherbord, otherwise I would support the Connect-X3 which only uses 4 PCIe 3.0 lanes. If I remember correctly the Connect-X2 won't work in a slot with only 4 lanes.

What about cards based in Aquantia AQ100(s)? Like Asus XG-C100F for example.
They are pretty new compared to ConnectX-2/3, and using 4 pcie lanes.

They miss some enterprise features and are more expensive (compared to used mellanox, intel, solarflare etc nics)
If you don't need these features why not?

(I'm not sure how good the driver support for aquantia chips is in recent *nix distros)

Driver support should be solid.
This is official support:
Driver support: Windows 7, 8.1 & 10; Windows Server 2012, 2016 & 2019; Linux Kernel 3.10 and higher; FreeBSD 12; DPDK; VMware ESXi
Linux distributions: Redhat 7.4 and higher
Though I found this as well:
