Running VM locally with easy live backup

I need to run Windows in VM locally with full support to GPU, USB, etc - should be minimal overhead.
At the same time I'd like to be able to backup live or near-live.

What can you suggest for Hypervisor and Host OS?

I like how I can keep system backed up using Hyper-V replica. But I can't do GPU/USB, etc.

VMWare workstation does all I need but I'm not sure how to take live backups. VM is about 200Gb, so it's very slow to transfer over network. There should be _something_ that can do incremental backups, etc?

Little history

I'm sick of developing in VM on my Mac. Now that I have office and schedule - I'd like to setup my dev environment back on my Desktop. I also learned that VS2012 likes CPU speed and I have workstation with i7-2600k. I plan on OC it to 5.0Ghz and use for development. Maybe add PCIe SSD to give it more speed. Being able to restore VM on another machine if something wrong with hardware, etc - crucial. Hence VM and backups.
