All good, EaseUS TODO Backup was not able to Restore the image fro mthe DVD ISO for some reason, although it could browse to the folder and see the files no problem.

Acronis Backup 11.7 was able to restore the image, once I recreate the VM using IDE instead of SCSI/SAS disks (complained it couldnt adjust the partition sizes before).

So I now have the same Server 2008 R2 on each environment.

I am glad that you find the solution.
Just want to share my story: a few days ago I have faced the same task and StarWind V2V converter helped me.

I was looking for the tool that can convert thin Hyper-V vhd into thin ESXi vmdk. And V2V did the job. I went with "convert to VMware growable image" and all was done.
