NVMe-OF? setup a demo network?

I've got some Xeon E5-V4 workstations and Mellanox 10/25GBe (ethernet) Connectex-5 cards. At the moment, I have two of these linked with passive copper cables and all seems to work well. They each of M.2 or U.2 storage.

Just for curiosity sake I was thinking to experiment with NVMe-OF, with my fabric being direct connect between the two workstations running Linux.

Not sure exactly where to start, but have been reading about it.

Thoughts, advice?

Yup, I've been reading those articles. Just wondering if anyone had done it in a home lab situation.
