New server configuration

Hi, need some suggestions how to configure my server.
I bought a DL380p gen8, I fitted two 2650v2, 192 GB of RAM, 12 SAS disks (3.5 HP 3 TB), HBA H220 to do ZFS and a FLR534 with two 10gb in lacp mode.
I thinked about Proxmox against ESXi because it's Debian based, it has containers and has ZFS natively.
MQTT, Plex, Home Assistant, zigbee2mqtt, surveillance (I'm thinking to Shinobi) are some of my needs and network storage as well.
I should also virtualize pfSense but not sure about this.
Actually boot drives (two sata m2 Intel drives) are served by the onboard P420i but I prefer to disable it using instead a pcie card with a sata controller for the two boot drives.
I also have two xm1440 Seagate nvme 800 GB that I can put in mirrored to store vm data and a GeForce 1050 ti that it can be shared between containers (Plex and Shinobi mainly).
One thing that I learned is that less cards I fit in less fans ramp up.

Storage side, I don't know of is better have two mirrored Seagate nvme for fast storage or use a 32 GB optane nvme as slog device or none of them.

Regarding the GPU, I prefer to store both 1080p and 4K files for Plex and my cams output two streams (I setup one HD and one low quality) and they do motion, line-crossing detections. So maybe not necessary a GPU to help Shinobi (I'll use it only to store the incoming video streams, to show a live dashboard and to playback recordings) or help plex.

Actually all stuff is served by a Synology NAS so the new server is maybe not necessary. But I'm doing this for fun and because I'm learning new things.

In few words, what would you do?
