This may be abusing General Chat a bit, but I wanted to make a thread anyway.

Hopefully eating this one in an hour or so. Started prepping the brisket at 22:00 last night. In the smoker at 225F just after midnight. This picture is from just before butcher paper wrap at 8AM.

@i386 Yes. Currently a Pit Boss Pro 4 from Lowes. I might end up with a GMG Jim Bowie next week.

Ha! The brisket that started as 11.7lb ended up gone within 10 minutes of cutting it up yesterday.

Here is another recent cook

@Prof_G - It was a good first smoker, but I realized I really wanted a bigger single grate so I can do larger briskets (the Pit Boss was just about out of room on a 14-15lb brisket.)

So today, I did the most #HomeLab thing ever and the Jim Bowie Prime Plus just showed up.

For the price, the Pit Boss has worked well. For 225F cooks, it worked well. Getting into 275-300F it struggled a bit more. This is more of jumping maybe 1-2 tiers in smokers to something much more substantial.

Your house, your rules @Patrick but, honestly, I like to see this type of content. I am old enough to remember when the Internet (and other message boards) was less about personal branding and more about the human connection - good, bad, and ugly. It seems like the type of thing we could all use nowadays.

My only complaint is that it’s making me damn hungry and can’t get any good brisket or pastrami here :(
If I had the space (or not living on apartment/condo) I would have my own as well.
