afaik once you have a GPU worked, you can plug almost all in. issue is after cmos reset (failsave BIOS settings)
I tried some old radeon videocards (old ones without extra powersupply) before. they wont work. Then i read older Radeon wont work. so i tried nvidia. i have never installed a video driver.
The RJ45 onboard is just for IPMI. you wont get internet with this port. maybe thats the case. i use USB to RJ45...

it is a question of cards vBIOS.
some tried GT710/740 with no video, after flashing some vBIOS it worked (don't know which)
so it need some UEFI support and must be signed right way.
on a good picture of this Naples olympus board i see a Gigabyte GV-R523D3-1GL rev. 2.0 (Radeon R5 230)
i have tried a AMD Radeon R5 430 (Dell) but did not work for me.

Has anyone actually deployed and used these or similar Microsoft/Azure servers in their lab successfully ? Do they have any pitfalls that only show up after being used longer term?

He used a EVGA GT730 with a MSI vbios and it worked for him. I tried to do the same thing with a GIGABYTE GT740 and none of them worked for me. (I have the Intel 15061-1A motherboard)

I will buy a gigabyte R5 230 for my last resort since that's the original GPU that came with this motherboard. if that doesn't work i might buy a DELL R740.

What card did you used to get an image from?
zotac GT 630 ( it seems i was lucky )
but with the dual olympus LGA3647 (1st gen) one, there is a 2nd gen MS Project Cerberus.
all of them have the same issue with no video.
unfortunaly i sold the board, so i can' try some BIOS tweak like modify/remove sec.boot keys.
once you got it up, you candisable sec.boot, enable CSM and put any card it.

1 Enable SOL.   
Launch a console and use the IPMI tool to activate SOL with the
BMC IP address (obtained in step 3 of section 5.5) with the following
command:
# ipmitool -I lanplus -U USERID -P PASSW0RD -H 
192.168.1.192 sol activate

Here is my BMC logs. I still wont get an image.
tried serial over LAN ? you get text based BIOS POST screen. you can change some options, disable sec.boot, config CSM, OpRom rules, set boot devide to install OS (OS can drive the GPU)

The default setting of SOL is 115200/8/N/1.

supermicro x11dpu is pretty similar and on ebay.de for ~200 euro for a barebones. 2U/HE, 12xLFF with 4 of the slots for NVME, dual 3647 with 12 RAM slots per CPU, 4x10gbe networking.
