Besides the terrible Ilyama 1200p monitors and the ASUS PA248QV, what else is out there that has 16:10 aspect ratio and FreeSync? I was thinking of buying two PA248QV's because they've got Adaptive Sync (???? whatever the hell that means, lol) but before I spend almost €700 on two monitors i'd like to know if anything else is out there.

And of course, if the monitors what i'm thinking of buying are anything good. I'll be replacing my two HP Z24i's with them. I don't care about high refresh rate, my 6900 XT doesn't go above 60 FPS in GTA V at 2400p+4xAA anyways and I don't need 240 FPS when i'm typing something in Notepad++ or Google Translate :^)

Another option I consider is getting a used Dell UP3017, if I can find one for sale that is.

I was in the same spot than you a while back. Imho there are no good options. I settled for two 27" QHD Displays (Dell S2721DGF). Physically they have the same vertical dimensions as a 25" 16:10 display and a few more pixels to boot. 4K is wasted on my eyes and an unneeded strain for my GPU anyway.

As far as I see AMD GPUs currently have driver issues with GTA5. Your 6900 XT should be capable of 100+ fps in QHD.

Edit: The UP3017 seeems nice. Personally I do not like anything bigger than 28". Either I have to move it back further, defeating the purpose for having a big screen, or it gives me too much neck strain.

GTA V runs like absolute ass even on a 3950X/6900XT because R* dropped the ball on optimizing it:

I'm afraid that if I go with a QHD monitor that i'll miss the height of 16:10. Me, often writing stuff in NPP the extra vertical pixels really help.

If you go from 24" 16:10 WUXGA (your z24i) to 27" 16:9 WQHD you actually gain height: 1 cm of physical height and 240 pixels.
Just tread a 27" 16:9 WQHD display as an horizontally expanded 25" 16:10 WUXGA display with slightly higher DPI.

Man, ASUS support is useless. They can't even explain me if Adaptive Sync on the PA248QV is either FreeSync or G-Sync Compatible.

I have been in camp "dual 16:10" for many years. Especially for the added vertical real estate.
A while ago, I finally gave in and got a single "ultrawide" screen. I highly recommend considering that option, if you don't need 2 physical monitors for some other reason.
What I got is 37.5", 3840x1600. That's even more vertical space than I have on my 24" 1920x1200 monitors. Both in terms of pixels, and actual size. DPI is slightly higher, but still good enough for me to use without any scaling.

Yeah but the UW screen i'm thinking of is €1500, F that.

I have dual Samsung 27" 1440p C27HG70QQN (144Hz/Freesync/VA panel) monitors (not recommending this specific model) on my desk using a cheap stand from amazon. Never felt like I need higher DPI or more screen real estate. I got both monitors delivered (open box condition) for $625

Dell AW3821DW? The price can dip below 1000€ these days, with corporate benefits.
That's still a lot of money, but I haven't regretted it yet.

I am quite happy with my two Dell S2721DGF displays. They can be had at least every other month for ~308€ each via corporate benefits or a special rebate from the Dell shop or Amazon. Only thing with these is that the colors are way off without calibration.

There you go: 16:10 WUXGA with FreeSync.
I've got dual 27" Acer IPS XF270HUA and besides a little backlight bleeding on the upper left corner of one of the monitors, I am pretty happy with them.
Used to game with all settings cranked up and they performed well (along with my Nitro+ Vega 64).

Acer has WUXGA FreeSync monitors? Consider me surprised.
