Another option for Linux is:

Greyhole - http://www.greyhole.net/

It is designed with home servers in mind. It also allows for multiple copies of data to be stored on different disks.

Good catch cactus. I've heard of Grey hole working OK for some.

Not a fan of it personally as its too unstable in testing and the sentiment seems common among other trouble reports ive seen. Its been 6 months since I last looked at it so maybe its improved, at one point they tried to co-opt the free version of FlexRAID and masqueraded it as their own parity solution then had to remove it, not sure who's running that project but some concerns there and you'd definitely want to test it before relying on it as your live solution.
