At the co-lo, I currently have 100Mbps with 250Mbps burst & I'm looking to upgrade.

I can go with the "blended" service, 250Mbps with 1Gbps burst or what other options might I have?

Options are really going to come down to what the datacenter or telcos that have presence in the DC want to offer? Your account manager should be able to tell you. Mine offers 100mbit to 10gbit, with a bunch of speeds in-between.
