How to avoid ES CPUs

when I buy my AMD CPUs: 9845, 9965 how do I make sure I'm not buying ES? how to recognise them?

put it in the motherboard and run them, check Brand string in BIOS / CPU-Z / HWinfo

What should I be looking for? in the BIOS? what should it say if non-ES and what does it say if ES?
