Is it ok to continue to use a usb drive for the esxi installation, and the Optane as the datastore cum SLOG ?

Of course.
I ceased to use USB drives since together with vCenter I always had some issues with logs after a few months (switched to cheap ssds) but ymmv.
From the optane point of view it does not matter where anything is except the slog virtual disk which must be on optane
