Fastest possible storage for S2600CP motherboard

Now that I built this monster and figured our DR plan - I realized I don't want or need mirroring on a drive.

So, today I need around 400GB of storage for VMs. More is better money permitting.
Usage for VMs: IIS, SQL Server, etc. But it's DEV environments, maybe 5-10 people working out of it, not much load.

What do you think about this?
Intel® SSD 750 Series: Performance Unleashed

It will be on S2600CP board (I read there is something with PCI speeds limited?) Inside P4000M case (full size card OK)

Obviously cheaper is better, so any suggestions welcome. Max possible speed is very desirable :)

I found all information I need couple of topics below:
NVMe on Intel S2600CP

So, here we go:
What do you lose by having the latest version? 1569/1435 MB/s (R/W) instead of 2500/1500. Worse, you get about 70k IOPS both read and write rather than 300k/110k.
I think I will be fine with those numbers over the regular SATA3. I do not want to downgrade BIOS.

Question is, which storage to get so I can get as much as possible out of PCI2 and not overpay for drive? Used is fine..
