Picked up some freebies with quad core Westmere 1366 CPUs (2xDL380 G6 and 1xML350G6). All 3 were pretty loaded (144-192gb of DDR3) and at 24x1tb between the 3.

I don't want to invest much into these boxes but at a minimum I'd like to upgrade each of them to a pair of 6 core CPUs. What direction should I be headed in? X56xx or L56xx?

Looks like I can get 6x X5650 for under $100 shipped which seems reasonable.

Suggestions?

L5640 has a solid reputation and a cheap price but if you need more computer then the X56xx is what you need. Or sell/part out what you have and get something newer with the money.

I would expect a lot of X5670 and L5640 around, they seemed to be the most popular at the time from what I saw.

I went the X5672 path for an upgrade for my old 1366 machines - only 4 cores, but fast 3.2GHz speed, 95W and they are super cheap - I think I paid around $35/ea for a handful a while ago, and my guess is they could be had for a little cheaper on BO now.
I tend to not use a whole bunch of cores, but when individual processes use them, I have noticed a nice pick-up in speed, even from x5650s
