Discussion on parts and freenas VDev configuration for 10g Editing NAS

Hello everyone:

I'm looking at building my first freenas Storage server to store finished projects and edit directly out of. I've decided to go about DIYing it after being unimpressed by the performance/price of Synology and QNAP solutions. My goal for this build was to come up with a more powerful solution than an 8 Bay Synology/Qnap for either the same price or cheaper and I think this hardware achieves that. I mean a Synology DS1821+ with 16gb of ram and 2x 10g card comes in at 2000 € without the drives, which is pretty much equivalent to this build.

Here's the configuration I'm considering:

I already own 5 Ironwolf 8tb Drives, that's why there's only 3 on that list.
Alternatively I'm also considering the following parts instead of the D1541D4U-2T8R:

Interestingly it comes to a very similar price between Xeon and the Ryzen, so I'm really undecided between the two and would like your input. What concerns me about the ASRock D1541D4U-2T8R SoC is that it's a 5-year-old platform (curiously it's what the Synology 1621xs+ uses) and being an SoC if the CPU or anything on the board fail's the whole thing needs to be replaced and at quite a cost.

Also, I would love general input about my component selection, perhaps I'm way off in some things, or you have knowledge of something better?

The inspiration for these parts come from STH's 2020 DIY NAS build guide, that article was what even made me aware of the Xeon D platform as well as they recommended Hardware articles for freenas.
