I spotted a bucket load of these 1100 watt PSUs for C6100 for $35
Dell Liteon PS 2112 2L 1100W Power Supply C6100 3MMJ3 | eBay

I'm thinking of picking up a couple for my pair of C6100 for redundancy and having both PSU slots filled. (should one spare PSU per server be sufficient?)
I'm not sure about the 3MMJS reference?

In case I run my C6100 with both expansion slots filled, would I be better sourcing 1400 watt PSU or will 1100 watt units be sufficient. (I have L5639 and 96 Gb ram (6 sticks per node).

PS when shipping these PSUs, make sure seller packs circuit board that sticks out at rear of unit with extra support as can bend easily if box is dropped.

The 1400 watt C6100 power supplies that I have seen are 208V/220V only and don't work with 110V. Also, a single 1100 watt supply can be too little to power a fully-loaded c6100 depending on drives, cards, number of memory sticks, CPUs, and so on. And as others have pointed out, use a power supply blank if you do fit a single power supply.

I use L5639, but I run at 208V so I haven't looked at the power consumption to see if a single 1100 watt 110V supply would be enough. Of course it would only be a problem if you ran with very high CPU anyway.
