Boot from NVMe sdd on Atom C2758 platform?

There's no NVMe driver included in the most recent UEFI release for that board. You'd have to add it in yourself if you want boot support (it will still work sans booting without said driver). Not the hardest thing to do fortunately. If you search for a guide, you should have no trouble finding one.

I don't think Supermicro bothered as NVMe really wouldn't offer much of a performance advantage on such a relatively low end platform.
