Has anyone experience with ASRock Rack TURIN2D16-2T or knows whether it supports PCIe Bifurcation, Raid 0 of U.2s?
I've searched the manual for Bifurcation and Raid couldn't find anything.
I came across PCIe link width (page 51 of the manual), is it hereby implied that the motherboard supports bifurcation and the mode selection in the BIOS is the way to set it?

I have a TURIN2D24G-2L which is very similar. Every MCIO connection on it supports x16, x8x8, x4x4x8, x8x4x4, and x4x4x4x4.

For example, can they be split into x8/x8 or x4/x4/x4/x4, or are they fixed at x16 only?

I don't have this particular board, but any and all epyc boards I've had (for both 7003 and 9004/5 CPUs) support bifurcation on all slots.

I’ll reach out to ASRock Rack support as well to double-confirm, but it’s good to hear that in your experience all EPYC boards (7003/9004/9005) support bifurcation on all x16 slots.
