These are good for a lot of different things. They have win10 IOT so they're good just for that, and then there's the use as a router since dual wans, proxmox as mentioned since I believe memory is good to 64GB, and also good as a digital sign player or HTPC since they were built for that. If they aren't tied to a KMS server, then just re-install Windows 10 Enterprise and it will auto-activate. The digital license is tied to the hardware hash stored in a Microsoft server.They are loaded with a corporate image of win 10 enterprise (fast food). It is not particularly locked down but an unknown windows password is set. Bios is not locked. Any tips on how to reinstall windows while preserving digital license?

I'm guessing the menu content is time driven? When I powered mine up it was showing lunch/dinner options, not breakfast.
