So I understand the point behind the breakout cable is to tie 40GbE infrastructure to 10GbE devices. However, does a 40GbE to 10GbE breakout cable give me more NICs or paths (i.e. - storage, etc.) in say something like ESXI?

You mean switch to ESX server ?
Would look like and need 4 x 10G connections.
Behaves like 4 x 10G

Or am I not understanding the question right ?

I was thinking from NIC in host to switch. I am more so trying to imagine how this would look/work in the real world. I don't see it where I work. We have the connections available, etc.

You would have a 40gbe port on your switch configured in 4x10gbe breakout mode, and 10 gbe links to your esxi hosts.

I don't see a point in doing so unless you only have 10gbe nic in your host....

Even then, you'd be introducing a single point of failure.
