1Gb Switches with 10Gb Uplinks?

i may get killed for this but I love the unifi and edge systems from ubiquiti

Each to his own. I went from Unifi -> Edge Max -> Non unifi / edge stuff.
More impressed with edge than Unifi, selling my last Unifi ap ac pro now, have replaced them with Ruckus, can't say I miss it after all shit Ubiquiti has pushed to its end users, I value stability, hence Unifi is not for me.

I put unifi switching/routing in other people's houses, just not mine

Also it is significantly cheaper to buy used enterprise vs new unifi.
