Which Intel stock radiator fit to this board? (Purple n100 version). I ordered version with only copper plate. Should I remove it before mount radiator?
you don't remove it, and yes, intel stock cooler fits perfectly, I'm using one on a n305, so you will need to check it makes contact with the copper plate tho, some have reported the need for 0.5 mm thermal pad for proper contact.

for real time transcoding QS is just faster, and also less power usage ( it can also do multiple transcodes at the same time, we are talking like 20-30+ depending on resolution )

Depends on what you want from the server, for a plex/jelly/nas n305 would be better, if you don't need to transcode, ryzen would provide more raw power

Does anybody managed control fans speed in Unraid using Fan Auto Control plugin? For me plugin can't find any pwm controllers (bios setting for fan speed set as "software")

Yes, install ITE IT87 Driver Plugin and you can choose between the fanslots. I personally let the CPU fan on "auto" and my HDDs fans controlled by temperature of the drives.

Thinking about getting this board, is ~20watt idle with drives on standby and ideal settings the best possible?

Thanks. Too bad it can't get lower. I'd be curious if the n305 is any different.
With the N305 I have 18,7W with 4 disks spun down and 2nvme as cache raid. but I can't reach c8 somehow.(altough I have the above mentioned settings) it is always stuck at c6. i have the be quiet system power s9 400W PSU. maybe the rm550x or a picoPSU may help to reduce it a little further. but I fear we won't see sub 10W..
for reference, with nothing connected I got 14.5W.
Curious what @MiauLightouch has as final power consumption

yah, those PC psu are not designed to run at very low W, and the efficiency goes down the windows as well, I have never seen my system under 20W, i don't think it's possible
