I have a HPE ProLaint with one of those 200V-240V PSUs so I know I can’t use them on 120V power.

My question is, if I get the 100V-240V PSUs instead can put them in, will that work? It only matters that the input side is rated for 120V and then it’ll work, no?

Assuming there's a compatible power supply for the server/chassis, then yes, it would work. Server side it's all DC (primarily 12V).

note that some 120-240V PSU have different delivery Wattages.
i.e. a 1200W PSU will have 1200W @ 200-240V
and only 900W @ 110-120V (800W @ 100V)
