There is a reason why so many moved away from hardware RAID to something like TrueNAS, or another non-windows based ZFS-based solution, and the use of enterprise/datacenter-grade SSD's. Cascading failures, write-holes, etc.

This version of the pm983 used v5 96-layer instead of the v4 64-layer V-NAND, was only a short time on the market, and only in big datacenters (probably made for Amazon). Not the best chances of getting an update without inside connections.
That would explain a lot, the first two to three versions are not quite free from bugs. Just do a long drive self-test on each drive to be sure.
The other reason (but i don't know if that would work) could be the trigger of a SMART reset, that would be the worst.

The latest firmware is most likely the best choice (GDC5B02Q), but keep them all at least at GDC5A02Q.
There are some .xslx documents in the repository which can show how many things have changed, even if it's not documented to the latest version, you can imagine for yourself how much...

I myself use an OCuLink to u.2 cable plus a PCIe card that offers an OCuLink port for my P5800X which sits in an old 2.5" to 3.5" WD IcePack heatsink/adapter from an old Velociraptor HDD with a lot of thermalpads. Works flawless without heat problems, at least it absorbs a good amount of thermal...
This SSD seems definitively to be not a top tier one... I hardly think NVMe can be blamed for that.

Even if there are some bit errors, in most cases this does'nt destroy the whole footage. And the nature of use is, as you already mentioned, are sequential writes, which are way less stress for the card than small random writes. Plus the dashcam itself would most likely not...
Can be the USB case, have you checked it with another SSD? They are mostly relative low-quality and the case chipsets have firmware updates which are not always provided by the manufacturer; for updating it you need to know the exact chipset&revision and risk it with an update from somewhere...

Is the H200 controllers firmware up to date too? It would be a PITA to update some 3 or even 8-16 drives every time an update arrives this way.
I hope you've done it with admin rights, but i think so.
Last thing you can try, is to simply put the SSD on the SATA power connector with out data cable and wait for 1-2h. They call it "power cycling", in hope that at some point an internal mechanism gets the drive out of serious problems, but...
