Sounds like IOMMU index change issue due to addition of new PCIe device to the system. Most likely Ethernet index number moved one step up or down.
Do "ip addr" and note down the Ethernet interface name and manually edit that into /etc/network/interface.

There are PCI M.2 cards out there that can do 22110 but thing to keep in mind that even through slot is x8, it can't do bifurcation, so you'll have to get card with PCI switch, which means...
The other day I used a spare power adapter rated at about 120W because original power supply was sitting inside cabinet and not long enough to reach.
Boy, right after reboot and going in OS boot, machine went total blank. 120W watt that most Intel NUC use, can't even power this beast.

Ouch, that sucks. What was your use case like? Heavy load or mostly idling? Thermals are not the best on this machine, makes me wonder if CPU cooked itself.
Did you try removing the battery to clear up the CMOS?
If by first M.2 slot up mean one that's designated to take U.2 drive, yes, 7-8mm will be height clearance for any heatsink. Slot in the middle can take 1mm slim heatsink. And one of the far right (right below the fan) have zero clearance, so putting any heatsink on that one is no possible.

Having a spare won't hurt I figured and these laptop size fans are not really know to have good quality or longevity unlike Noctua, easy to find and replace.

Mine shipped back in March came with 17, updated to 22 yesterday.
While the update process went smoothly, upon reboot screen was blank and that had me immediately regret the decision to update. Anyway, after clearing up the CMOS, screen finally came back. Phew...
