In your search for an NVMe SSD, did you have a budget in mind? (i read "I want to go for reasonably cheap stuff").
It would help to know if you are limited to PCIe 3.0 or 4.0 and higher.
You will likely find 3.0 NVMe SSDs cheaper.

Swap CPU to an E3-1200 v4 CPU and you should be able to get to ESXI 7.0.3
Swap to your new hypervisor now if it supports your current hardware.
Anything new (MB + CPU + RAM + Chassis) will be over $1000 (if parted)
