    If you can find out how tall the heatsink is, the U.2/NVME slot can fit a U.2 drive up to 7mm thick, plus about ~1mm for the adapter. So you could potentially fit something up to about 8mm total thickness. Maybe? Roll the dice and report back, for science!

    I'd run Windows as a VM and then simply share your DrivePool to a Plex LXC as cifs. My plex lxc is entirely independent of where I store my media files.

    Your #1 problem is almost certainly disabling ASPM in the BIOS. I'd try enabling it to see if you observe any instability.
