oooh it also supports the full range 10gb/25gb/40gb/50gb/100gb across its ports, along with vxlan + DCB, this one would be perfect for me.

In the spec > https://i.dell.com/sites/doccontent...ocuments/dell-networking-z9100-spec-sheet.pdf

It says "The compact Z9100-ON design provides industry-leading density of either 32 ports of 100GbE, 64 ports of 50GbE, 32 ports of 40GbE, 128 ports of 25GbE or 128 ports 10GbE and two SFP+ ports of 10GbE/1GbE/100MbE"

Does this mean you can only be in a single port mode? you can't for example have a few ports at 50G and some at 40G? and some at 10G? with the appropriate breakouts where necessary of course.

No they just list it that way so you know you can split the ports with breakout cables so a QSFP28 can be a single 100G or 40G, or 2x 50G, or 4x 25G or 4x10G
It is based on a Broadcom Tomahawk.
I have seen other implementations that force you to do blocks of ports at a time (like 8 at once) into a mode, but i don't see any note of that in the User manual with a quick browse. Someone with the switch can probably confirm.
